Properties and Uses:
Diuretic, source of minerals and chlorophyll. Parsley is used in cases of
difficult urination, dropsy and kidney stones. Combined with echinacea,
plantain, uva ursi and marshmallow root, it is a good remedy for kidney and
bladder infection. Parsley is also used for arthritic conditions linked to
defective kidney elimination. The seeds are sometimes used as carminatives. The
leaves, bruised, are a good application for contusions. Parsley is used with
fish, soups, vegetables, and sauces. It is also very effective as a breath
freshener
Caution: Parsley can be
warming and should not be used if the kidney is inflamed. Avoid heavy
consumption of this herb during pregnancy.
General Description:
Parsley is the leaf of a biennial herb (Petroselinum crispum). There are two
types of parsley used as herbs: curly leaf parsley which is generally used as a
garnish, and Italian parsley which is used as a flavoring to dishes.

History: Romans used
parsley to flavor and garnish foods. Medieval Romans believed that you could
kill an enemy by plucking a sprig while speaking his name.
Origin: Parsley is
mainly produced in the United States, France, and Germany.
